I have a whine from the rear diff on a standard 500e (1991) five years ago it was refurbished and now it has started to whine again
1.Should I replace it with the Wavetrac or have it stripped down again and rebuilt
All advice please

Do you know what exactly was done 5 years ago that made the whine go away? What was replaced, etc?

Replacing the ring gear carrier (i.e., Wavetrac) will probably not make any difference. I believe the whine is caused by either bearings, or out-of-tolerance clearance between the ring gear & pinion. Diff whine is not a common problem on the 210mm diffs, so I'm not sure what's going on with yours.

I was told that it was completely rebuilt but I have my doubts as the problem has recurred so I think I will take it out and have it rebuilt
to as new unless if an original is still available through Mercedes
