How to record data of cars for sale for later reference?

You would think this is an easy ask but I am an scratching my head on how best to record / save data of cars for sale.

The data I would like to record for each car is:

Date (I would be looking to do this regularly - maybe 3 times a week, so I can see how long cars take to sell, when they are pulled or when the price is reduced etc. or perhaps see them rise 😀)
Website
Colour
Model
Mileage
Location
Year
Reg number
Asking price

By way of potential numbers, I'm probably looking at Car & Classic, eBay, Autotrader, Exchange & Mart and FBMP

Currently, C&C has 15, eBay 2, Autotrader 5, E&M 0 and Facebook 5 so ~25 to 30 cars each time I collect the data.

Some cars are for sale on multiple sites but that isn't an issue.

I'm a regular user of Excel but can't see an obvious way of laying out the data.

Thanks for any insight, I can't be the only person wanting to do this.
