Hello all from Ireland.
Firstly I haven't got a 500E, but I do have an M119 in a '95 SL 500.
I've had it a couple of years, but it's been in storage due to Covid and lack of free space at home. It's now at home and I'm working though a few issues before getting it on the road.
It's at 150k miles and I have only sketchy service info, however it runs nicely and the oil is (and seems to stay) clean. What I'd like to have is some advice on what to do re preventative maintenance engineer and 4 speed trans wise.
I have workshop facilities.

OK, there you go
The picture is a bit flattering, there is a bubble or two on the rh wing and a choice of colours 😊

Have the wire harnesses been swapped for newer builds? Look at the ETA and the upper and lower harness plugs for the white tags. That is one area the M119 of the era had issues. Vacuum connections and lines should all be replaced if they are hard. any engine breathing tubes will most likely be brittle as well, needing replacement. Belt if there are signs of fraying or cracks along the ribs. Proper spark plugs, ignition wires, coils and of course if there is any evidence of leaking oil from the cam seals behind the insultaor cups, rotor and distributor caps, be proactive and replace all. Any oil leaking out of the PS tandem pump (IIRC you should have that as well) but I dont know if that is an issue on your model.

According to an advertisement for the car (not the one I bought it from) they have been replaced. I bought it as a trade sale and found this ad on-line afterwards.
The throttle body plug shows signs of having been resealed so possibly the looms have been rebuilt, rather than replaced. I will investigate further by opening some of the outer sheath.
Caps, plugs and leads are all on the list for inspection and I will check for any oil when I do that. The engine bay hasn't been cleaned and there are no obvious leaks.
