Cut coppa steaks from a coppa roast which is part of the shoulder of the pig. Super marbled and nobody knows about it other than the Italians. You have to get comfortable with butchery though ---- I typically buy a 5-8 lbs pork shoulder (at some ridiculously cheap price like $2.50 / lb). Most of the time we Americans just cook the crap out of the entire shoulder and shred it. What a waste.

FWIW --- the two knives that I used most often when breaking down a primal cut (I'm a novice) are knives that I have on hand (I don't want to waste money on buying excessively specialized knives) --- a super heavyweight meat cleaver that does just fine smashing through bones, and a thin, delicate, super flexible fish-deboning knife that works just fine with red meat as well.

I buy pork shoulders and load them into my smoker for 22-24 hours. Yum. I have a local restaurant provisioner I buy my meat from, and yes, pork shoulders are dirt cheap from them. I'll have to look into the coppa roast thing. Sounds yummy.

@kiev I just ate this for dinner and it was so good. Just salt, breadcrumbs, and pop in a 400F oven for 25 min. The joy is in the intense yet tender “darker” muscles of pork and in savoring the juicy striations of fat (marbling) that wind their way all throughout the coppa cut.
No bland tasteless “center cut pork chops” here. This cut is for people who savor the earthy succulence of well marbled pork. If you like the cap portion of beef ribeye, you will like steaks cut from the coppa roast of a hog.

Those might be good. Good marbling and darker meat. Salt and breadcrumbs is kind of a similar idea as German schnitzel. When the butcher wants to increase profitability.... instead of selling the while butt (shoulder) for 2.99/lbs, just slice up the entire butt into steaks and sell for 4.79/lbs!

Beautifully marbled rib eyes are $9.47/lb when sold in 3-packs. Grass fed/finished chuck pot roast (I grind and pan fry it, it's my most common staple) is $6.19/lb. This why I don't need Costco membership

Those are essentially "country style ribs" I make those on my smoker at 275 and turn every 90 minutes and spritz with apple juice to keep them from drying out. Haven't made them in a while since I've on a brisket kick lately.
Put these pork butts on yesterday afternoon and they should be done well before kickoff. Smoked at 200 overnight and upped to 225 just now.
Just had my 1st Covid Jab. Oxford one. NI is doing a fantastic job at rolling out the vacinne quickly. They have went through upper age groups mostly already. I'm 34 but was identified due to Asthma and got it.
Avoided Covid as far as I'm aware thus far so hopefully the vacinne will help matters for all.

My wife has had both of her shots as she managed construction capital projects for MedStar St. Mary’s and MedStar Southern Maryland Hospitals. Second jab she says hurt quite a bit more than the first one.
I will Im sure be lucky to get my shots before this fall. I think I’m in the very last group eligible to get them.

That’s great Joe! Your on your way. Due to our age my wife and I received our 2nd moderna vaccine shots on the 25th of February. We went to the Disneyland Supersite for the first shot on January 23rd and were due the 2nd on February 20th BUT the big snowstorm in Texas and the Midwest delayed the vaccine shipments to California. Then the Supersite shifted to the Anaheim Convention Center and our 2nd shot pushed to the 25th.
We both have been staying mostly isolated at home with trips to the grocery store as little as possible and went out for a drive once in a while. We are both thankful to have it over with and are supposed to be fully vaccinated on the 11th of March (2 weeks after 2nd shot)
The vaccinations are becoming more readily available now for everyone.
Hopefully this is the beginning of the end of this gray period in all of our lives.

And paper thin crepes for lunch, with variety of "topings"
That's a lot of "done" in 1/2 day!

Our worthless governor finally ran out of cronies to provide vaccinations to last week so they lowered the age for eligibility. Got notified Thursday night, made reservations for Monday morning for both myself and Mrs. Dan. Looking forward to getting this done, especially because we've been traveling quite a bit of late but otherwise have stayed at home as much as possible.

I'm only complaining because our "wonderful" governor gave two Federal "pop-up" vaccination sites offered to the state to rich old white guy gated communities that one of his best friends, a large land developer, happens to own. One of the county commissioners, who presently does not qualify for a vaccine, even got one at one of these pop-up sites.
It's not a political thing, it's a "who has money and power" thing. I don't care what his party affiliation is, he put the well being of personal/business associates ahead of the people who voted him in to represent them.

Never had Margaret’s Chinese egg tarts BUT I would kill for another visit to Lisbon for their egg tarts. I think I could eat them all day. I also had them in Funchal on Portugal’s island of Madeira. Portuguese egg tarts are a real treat. Maybe someday I’ll get to Macau and get a taste of their’s

International travel is not in near future with all of the restrictions. Even with my 3 shots of the Moderna vaccine. I think the news media is scaring the hell out of everyone. They need to find another subject to rag on.
So who on this board has had covid thus far?
My family lasted 21 months since the beginning of pandemic (April, 2020) and finally caught it. Me, wife, and both children tested positive with home tests (that you buy at the store). Me and wife were knocked out heavily for 3 days and getting better every day after that. By the 5th day we both felt much better although by no means fully recovered. After a week, about 95% back to normal, though smell is practically gone. Children were "under the weather" so to speak, but in good mood and playful, though with a nasty cough.

Yikes!! Glad to hear that you are still ticking!! Ugh! I know a few folks that have caught it and lost their smell too! Arrghhh! Hopefully you will get it back in due time.
We still haven’t caught it and my wife and I just got the Moderna booster in late Nov after 2x Pfizer in March/April. That said I have some lingering annoying but not serious side effects to the booster. I think eventually everyone will catch Omicron though.

My father, who lives in Russia Federation, had regular and then a booster Sputnik and then, I forgot which one, some Western vaccine - and still managed to get covid!
Oh, and the loss of smell is good for weight management. I find that I eat less than before and have already lost some pounds

Wife caught it (before vaccines were available)... son caught it (from his soccer teammates after his first shot)... mild cases, simple partial loss of taste and smell... nothing for me, unless I already had it in 2019, which is what I suspect... some guy across the aisle from me coughing nonstop on a 5hr flight... 5 days later I was coming down with something... I got out in front of it but it still took me two weeks to get rid of it, which is completely unheard of for me... the last thing I wanted was to spend New Years in a foreign hospital. Friends I know who have had it say it's nothing to Fk with -- like a sommelier friend who can no longer taste or smell a year later! Can you imagine?! People haven't been right since.
I want nothing to do with it, so I've still been masked and avoiding indoor gatherings, including restaurants. They don't know what they don't know, yet they still keep talking about it, which leads people to do things that still land them with Covid. No one said sitting in restaurants with no masks made any sense, vaccinated or not. Yet here we are... SMDH

None of my immediate family has tested positive for it yet thankfully. I had vaccine in Feb (high risk group with Asthma) and booster there a few weeks back.

My youngest daughter, 19, has returned home from Uni and tested positive; this is her second time, previously caught it in August, despite being double vaccinated by half-year. She is not as badly affected as the first time, whether due to inherent resistance or omicron (not that it’s confirmed) being less severe we don’t know. She is isolating in her bedroom and we are all vaccinated and boosted so fingers crossed.
We know far more friends and acquaintances with it now than ever before, so agree it seems almost inevitable. I'm pretty certain I got it in January of 2020 since I had all the symptoms but it wasn't a known deal back then. My parents and siblings in Alabama all had it over the summer and we have had some close contacts locally. I'm vaxxed and boosted as is the wife and the kids are also vaccinated and so far so good.
So.... I had / have Covid! 
On 28th I took a lateral flow test before visiting my brother as I knew I would be working in his w221. Test was Negative.
That night and the following day I had a headache. Didn't think too much of it as I do get headaches fairly regular. Then by 31st evening I had a cough too. Took another test at home and it was positive. Happy new Year!
Booked PCR test for next morning. That came back positive too. Strange thing is, despite having moderate Asthma etc I felt fine. No loss of taste or smell at all. No temperature. Like a very mild cold, only for the tests I wouldn't have known a thing.... cough gone by next day. Yesterday and today I felt 100% normal and tested negative again at home. But I'll still of course isolate per current rules.
I was not in any social gatherings. Not in a single restaurant or pub etc. No one of my family have symptoms or tested positive at any time. I have 3 jabs. My GF is still negative and she has to test each day before her work.
So it is a mystery where I got it really. I can only presume it must have been whilst in a supermarket, touching / buying a contaminated item or from a disposable coffee cup etc.
I am glad however symtoms were so mild so no harm no Foul. Can only assume it may be the new omicron variety which is driving records case numbers over here. But thankfully was very mild for me at least.
So if any of you have underlying health conditions etc I hope this is some good news of sorts for you! Haven't heard of many asthma sufferers contracting it but it did not affect mine.
I think short of locking yourself in your house and cutting off the outside world, we are all going to get it at some point. And probably over again too. Keep on keeping on nothing else for it I'll continue as I did before being careful when I have done my "time" at home this week. But will also test myself every time I go to see anyone vulnerable until this thing settles.

Joe, Sorry you got the dreaded Covid. Glad to hear you are doing OK. My wife and I still wear masks inside buildings. So far we have avoided it. My one concern is supermarket shopping carts and exchanging money. I always wash the shopping carts with alcohol when I choose one (just the part I touch) and when I leave the store. I always wash my hands before entering my car and try not to touch my face ever.So.... I had / have Covid!

My experience has been "anti-mandate" is just a ruse for anti-vaccine. I mean, it's like kids fighting sleep -- they know it's probably good for them but they "just don't want to be told what to do." It's BS -- they don't want to go to sleep.
This all feels the same way to me.
