Does anyone know the exact name and code of the gray leather for 94 e500?

There's only one interior code (xx8) and name, unless you count the different spellings (Gray vs Grey).
That said, upholstery will fade at different rates depending on sun exposure and whatnot. If you are looking at either dye or replacement leathers, it's best to send a sample in to the company for them to custom match.
