Okay... hopefully I will shorten the learning curve and get up to speed quickly. In the meantime...

My drivers headlight is badly cracked and on the passenger side the clear plastic trim around the headlight lens is frosted over and old looking.

Are all of the W124 parts compatible?
Are the 300E / 400E headlight parts different?

Those parts are not correct for a 500e, they are specific to the 300-400e. Either purchase a US spec plastic lense or upgrade your headlights to the Hella 500e euro headlights. Do a search of the forum as there is a large thread about this upgrade.
 
Unfortunately, the 500E uses unique headlights not shared with any other 124 car. The main difference is that the inner lights are driving lights as opposed to fog lights, completely different light pattern.
The first link above is for '94+, or "facelifted" models which has the grill frame integrated into the hood as opposed to being bolted on in front. Also, those are regular 124 headlights.

The second link is for the pre-facelifted, regular 124s, IOW, the inner lights are fog light lenses. They will bolt onto your existing headlights but are not correct.

I would recommend you replace your existing headlights with 500E specific euro headlights. They are a bit pricey but the light output is significantly better.

Installing any of the eBay lights you link to will not only be inferior, with less-effective lighting, they will also devalue the car. I would not recommend any so-called plug+play HID conversions, these are very difficult to do correctly, and require custom clear lenses ($$$). HID burners are not designed to work with halogen reflectors & lenses.
