I've got 18x8.5 wheels with 35mm offset all around, what is the correct thickness wheel spacer for this application? (Planning on lowering approx 1 inch in future).
The correct thickness would be zero, as in general you want to avoid spacers like the plague.
Assuming you own a 500E and want to push the wheels further out strictly for aesthetics, 10mm would work, 15mm would be pushing it a bit up front. Problem is you need hubcentric spacers and H&R doesn't offer them in 10mm thickness due to grease cap interference. The correct solution is to buy wheels in the correct width/offset that don't need spacers. Or leave them alone, the size you have is fine.
Search the forum for info on lowering. It's not straightforward with SLS and a 1-inch drop is a ton, as the 500E is already the lowest of all 124's except the E60 AMG.
