That's a good question. The transmision tunnel is wider on the V8 cars however I believe the rollboxes are the same throughout the chassis line. Only the V8 cars, coupes and cabs would have the Burlwood unless specially ordered.
I would feel confident in using any 1991 or later console box in a 500E, from a fitment standpoint. As Drew says, only the higher-end models came from the factory with burlwood, though I have seen 3-4 "pedestrian" 300E/E320 124s in the wrecking yards with special-order burlwood.
They are all the same size/dimensions and will fit all years/models 124 chassis. Since you don't care about color, the only difference is the wood, as mentioned in post #4 above.
