Could someone tell me what is the maximum tire size I can use on the rear?

could I run 275-40-19?
the wheels are 18"x 9" amg

Assuming that you plan to run a staggered set of wheels and your rear wheels are 9" wide, you can go 275/35 R19 or 285/30 R19. If your car is lowered or you are running sports springs you might have some rubbing issues.
 
I hope you made a typo and do not plan on running 19" tires on an 18" wheel! You can run 285/35/18, but I've had trouble with 285 tires before. 275/35/18 should fit perfect on the back with 245/40/18 up front.

As the tire and wheel get wider, the offset becomes more critical. What wheel offset are these? Are you planning on 9" wheels all around?

18x9 is a little narrow for a 285 tire, something closer to 265 would be preferred, 275 should be fine. Make sure the front & rear diameter / circumference are within ~1% or you'll have issues with cruise control and/or ASR. If the size difference is at 1% or a hair over, make sure the rear tires are larger diameter than the front. ASR gets very unhappy with smaller diameter rear tires. (Don't ask how I know.)

Assuming a set of 18x9.0 wheels all around, yes, that size will work. It's a bit wide of a tire for a 9" wheel, check the tire mfr specs to verify it's approved for a 9" width.

I'd also consider 255-40-18.

As mentioned previously... offset is going to be important up front with a 9" wheel. To high an ET number and it will hit the strut. Too low and it might rub the fender lip.
